Locally produced honey will have a different flavour and colour that may change from one year to the next, depending on what sources the honeybees are gathering their nectar and pollen from.

Local honey will not have gone through the processes of pasteurisation. Pasteurisation kills all of the goodness contained naturally within honey, so effectively once pasteurised (heated and blended) the honey is basically reduced to a natural sweetener.

You may be surprised to learn that most supermarket brands of honey will have been sourced from all over the world, then pasteurised, blended and then packaged in the UK. Your local bee keeper will only have harvested the honey, then poured it through several filters to remove the flakes of bees wax and pollen etc, then jarred, labelled and sealed it with anti-tamper tags.
